We cannot think of anything more satisfying than matcha blondies as a sweet Friday treat to get you through that final day before the weekend!
Ingredients
150g vegan white chocolate100g more chocolate chips/dried fruit or nuts if you want some texture
150g butter/ vegan alternative (salted is fine)
2 eggs (or flax eggs)
110g plain white or wholemeal flour
200g coconut or caster sugar
3 tbsp PerfectTed matcha
1/2 tsp baking powder
1 tsp vanilla extract
Method
1. Line an 8 inch x 8 inch pan with baking paper and preheat your over to 170°C fan.
2. Using the bain marie method (saucepan with boiling water with bowl resting on the top) melt your chocolate and butter together. Stir occasionally and take off of the heat once everything has melted down.
3. As your mixture is cooling add your sugar and mix in well and then incorporate your eggs.
4. Combine your flour, matcha, and salt together and combine with your cool mixture.
5. Add your vanilla extract and chocolate chips or dried fruit/nuts if you'd prefer.
6. Bake for 25-35 minutes.
